Student Friendly Recipes – Strawberry Cream Cheese Pastries

It’s easy to go to Tim Hortons or Starbucks or even WalMart and get some store-bought pastries for your office pot-luck or Christmas dinner, but there really is nothing better than some homemade pastries. These quick and easy pastries will leave your mouths watering this holiday season, and with so many variations in the filling, you can have everyone satisfied!

For the Pastries:
1 Package (8-ounces) cream cheese, softened
2 Sticks (16 Tablespoons or 226 Grams) of butter, softened
2 Cups of All-Purpose flour
Powdered Sugar for dusting
½ Teaspoon of salt

For the Filling:
1 Package (8-ounces) cream cheese, softened
½ Cup of powdered sugar (if you prefer it sweeter, you can add more)
1 Teaspoon of pure vanilla extract
Strawberry Jam – you can also substitute blueberry jam, cherry pie filling, apple pie filling etc.

1. Beat cream cheese and butter until smooth and fluffy. Add flour and salt – mix until thoroughly combined.
3. Lightly dist work area with powdered sugar. Transfer the dough to your wok area and divide in to 4 round balls. Flatten each ball and cover with plastic wrap. Refrigerate for 30 minutes.
4. Meanwhile, prepare filling by combining cream cheese, powdered sugar and vanilla extract in a bowl. Beat until creamy and smooth – set assize.
5. Remove dough from fridge and let warm for 5 minutes. Dust work area with flour and then roll each ball of dough to ¼ inch thick. Cut into 3×3 squares.
6. Fill the centers of each square with ½ teaspoon of cream cheese mixture, and ½ teaspoon of filling.
7. Overlap the corners of the dough to the centre and over the filling, pinch the corners together.
8. Refrigerate for one hour, then bake 10-11 minutes at 375 degrees Fahrenheit. Let cool completely and then serve.
